Protein Bread

If you like bread, this recipe is definitely worth a try.  It is a bit heavier/denser than your normal bread and I made it in my round cast iron pan (it was a bit like damper), but you could also use a small bread tin or even in muffin cups.

Here’s the recipe:

1 - 2 bananas (depending on their size)
1/2 cup Vegan Protein (Vanilla Coconut)
2 cups flour (chickpea, oat, buckwheat, etc)
1/4 cup mixed nuts (I prefer almonds and walnuts)
1/4 cup Super Seed mix (add most in the mix and leave a little to sprinkle on top)
1 - 1 /12 tsp baking soda
Pinch salt
3/4 cup nut milk (more may be needed if mixture is too dry)
1 Tbsp apple cider vinegar
Rolled oats to sprinkle over top

Blend all dry ingredients in a food processor. Add banana/s and apple cider vinegar and mix again. Slowly add nut milk and continue to blend until all ingredients are thoroughly mixed.  Line a baking tin/pan and pour/spoon mixture until evenly spread.  Sprinkle extra seeds over top and a few oats.  Bake in 180C oven for approx 30 minutes or until cooked through.  Leave to cool.  Store in airtight container in fridge or slice and freeze.

Great as a snack or as a breakfast bread with anything you like!! Use your imagination and experiment.
