What you need:
1 cup flour (your choice - I used 1/2 buckwheat, 1/2 coconut)
1/2 cup oatmeal
1/4 cup Superfood Mix
1/4 - 1/2 cup nut butter (I used almond but you can use peanut)
1/4 cup coconut oil
1 tsp baking soda
cookie cutters in the shape of your choice
1/2 cup chicken stock (use water instead of the stock if you wish)
1/3 cup shredded cheese
Pre-heat oven to 150ºC. In a large bowl or food processor combine flour, oats, superfood mix and baking soda. Mix thoroughly. Add egg, coconut oil, cheese, and chicken stock (if using) and mix again. Then add nut butter and continue to mix until it forms into a dough like consistency.
Line a baking tray with baking paper. Roll the dough mixture into the desired thickness and cut out cookie shapes. Place each cookie on the baking tray and bake for approx 40 minutes or until golden brown. Allow to cool on a cooling tray.
The amount of cookies you make depends on the cookie cutter and thickness of your dough. I did a variety of shapes and managed to get approx 20 cookies.
Best stored in air-tight container in the fridge but can also be frozen.
